celebrating the 4th of July in true southern style - with a little potato salad
A long with the tradition of grilling, swimming at the lake and shooting off fireworks we always serve my grandmother's (know as Grandmub) famous potato salad on the 4th of July. I have no real recipe but was I simply told to add a little of this and a little of that - chopped celery, hardboiled eggs, salt, pepper and of course some Dukes mayo. But the real secret to the tangy taste is what I would like to share. It is all in how you prepare the potatoes themselves. Boiling them till tender, remove the skins and cut them in half. Place them cut side up on a large baking sheet and poke each potato with a fork a few times. THEN - drizzle vinegar over the warm potatoes …enough so it can soak in. Once cool cut into bite size pieces, mix all ingredients together and serve.
